chopped jalapeno peppers
3 medium green peppers, cut into 1-inch pieces, divided
1.5 c. of white vinegar, divided
6.5 c. sugar
1/2 to 1 tsp. cayenne pepper
2 pouches of 3 oz. liquid fruit pectin
6 drops green food coloring
In your blender or food processor, combine jalapenos, half of the chopped green peppers, and 1/2 a cup of white vinegar. Process these u.ntil they are pureed. Move this mixture to a large dutch oven. Repeat this process with the remaning green peppers and 1/2 a cup of white vinegar. Add to dutch oven
Add the sugar, cayenne, and remaning vinegar to the dutch oven. Bring mixture to a rolling boil over high heat, being sure to stir constantly. Stir in the pectin quickly. Return the mixture to a rolling boil. Boil for 1 minute while continuing to stir constantly.
Remove mixture from the heat and skim off the foam. If you want you can add the food coloring. Ladle the hot mixture into hot half-pint jars carefully. Leave a 1/4-inch headspace. Remove the air buubles, wipe the rims clean and adjust your canning lids and put on the screw bands.
Process for 10 minutes in a boiling-water bath canner.
